This term is led by Samuel Edison, a former chef at Michelin-rated restaurants and Le Cirque in New York. He specializes in Western and East Asian vegetarian cuisine. Samuel became vegetarian in 2019 and co-founded The Little Lotus, a vegetarian catering company in NYC.
